OUR AGAVE Fields
The agave fields of our family estate are located in Los Altos, the highlands of Jalisco. For four generations, the Vázquez family has cultivated these lands with care, combining tradition, expertise, and a deep rooted respect for nature. With a focus on maximising the yield of each agave and harvest, to minimise the number of agave plants required and continued maintenance of the soil health, ensuring the land is left for a minimum of two years after each harvest, for the soil nutrients are fully replenished before replanting. The aim for each generation is to leave the land in a better condition than which they inherit it.
OUR AGAVE
Through four generations of learning, we continue to improve our farming techniques. The agave in our fields is monitored daily to ensure each plant is nurtured through every stage of growth and harvested only at peak maturity. Our piñas are over 50% bigger then the industry average and have a higher BRIX content, producing richer, more complex flavours while using the land more efficiently. With the dedication and care taken to grow our agave, our Blanco tequila is made to really showcase the agave flavour profile, with only water and yeast added during the distillation process.
OUR DISTILLERY
In May 2024, we moved production from our original family distillery to our new brand home, Hacienda Cazcabel. The distillery has been built to make production as sustainable as possible, with 95% of the power required being provided by solar energy. Having control of production from field to glass also enables us to minimise wastage, with any waste water being collected and treate and agave fibres being collected to created compost both of which can then be used on the farm land. All our agave is brick oven cooked, in one of our three brick ovens, for over 24 hours and then left to rest for a further 24 hours. The cooked agave is crushed by roller mill to maximise the extraction of agave juice. Local spring water is added before the liquid is then fermented with our proprietary yeast, Finally, the spirit is double-distilled in copper-lined stills to create an additive-free tequila that truly showcases the flavour of the agave.
